Eat Your Greens Soup

This bright green soup is packed with loads of greens – including broccoli and edamame beans, making it a protein-rich soup perfect for a main meal!

I know that some people my be turned off by green-colored food- but trust me on this one, you’ll enjoy every last spoonful of this nutritious soup!

Well. Those guys are missing out because this green soup tastes amazing and is one of my absolute favorites.

My Eat Your Greens Soup is loaded with all the green goodness you could possibly want- and you probably already have all of the ingredients in stock! It’s the perfect blend of broccoli, edamame beans, spinach, and the freshest herbs courtesy of your local grocer- or maybe even your personal herb garden? It’s going to taste super fresh whichever way you choose to go.

Don’t let the small list of ingredients fool you though- this recipe is packed with protein and can fill you up pretty well. Soup for lunch? If it’s as yummy and healthy as this then why not, right? Serve a few pieces of bread on the side and you’ll be ready to conquer your afternoon slump.

Eat Your Greens Soup

Total Time: 50 mins
Servings: 4 servings

Ingredients

  • 1 Tbsp olive oil
  • 1 leek chopped
  • 1 clove garlic minced
  • 1 bay leaf
  • 3 cups broccoli (1 head) roughly chopped
  • 1 cup shelled edamame beans
  • 2 tsp bouillon
  • 6 cups water
  • 2 cups fresh herbs, mixed
  • 2 cups fresh spinach
  • 1/4 tsp chilli flakes
  • 1 lemon, zested

 

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add leeks and garlic, stirring until softened without browning.
  3. Add bay leaf, broccoli, and edamame.
  4. Mix bouillon powder into water. Add to pot. Cover, and let simmer for 10 minutes.
  5. Add fresh herbs and spinach. Use an immersion blender or transfer to a blender, to blend until smooth and creamy.
  6. Add chilli flakes and lemon zest.
