Beetroot White Bean Dip

When I say bean dip, you likely think HUMMUS. While there are dozens of homemade hummus recipes out there, not all are created equal. And what happens if you don’t have any chickpeas lying around? This recipe came from that exact scenario. I was looking to create a homemade hummus recipe, and found an empty pantry, save for a can of white beans, and some beets in the fridge, and was instantly inspired to make this beetroot white bean dip.

This dip is like no other. It’s NOT a hummus, and that’s okay. It is subtly sweet and earthy, thanks to the beets, which gives it a crazy beautiful pink color. Seriously, this beet dip recipe is a show-stopping appetizer for your next get-together. Better yet, if you’re feeling fancy, swirl a little bit of tangy labneh on top and serve with crunchy pita chips.

Like hummus, this dip starts with combining beans, tahini, lemon and garlic, but what makes it unique is not only the beets, but I used nutty hemp oil. Hemp seeds are a great source of omega-3 fatty acids, but if you don’t have hemp oil on hand, you can use olive oil in it’s place.

There are so many ways to enjoy this bean dip, from dipping raw veggies, crackers or pita, or I like to serve it with roasted or grilled vegetables right on top with some soft pita bread. Bean dips make an awesome base for a meal – you can add anything on top! My hubby loves this as a spread on his wrap or sandwich, and I love eating it with a spoon – seriously, it’s that good!

No matter how you blend it, this Beetroot White Bean Dip is pretty darn tasty – and it’s pretty too!

Beetroot White Bean Dip

Serves: 8

Ingredients

  • 1 can white beans, drained (keep 1/4 the liquid!)
  • 1 c. cooked beetroot
  • 1/4 c. olive oil or hemp oil
  • Zest of 1 lemon
  • 1 Tbsp lemon juice
  • 1 clove garlic
  • 1/4 c. tahini
  • 1/4 tsp salt
  • 3 Tbsp hemp seeds

Preparation

  1. In a food processor, combine all ingredients (except hemp seeds), blend until smooth.
  2. Top with hemp seeds
  3. Enjoy!
