Copycat Just Egg Chickpea "Egg" Scramble
Make this delicious Just Egg chickpea "egg" scramble for a Sunday brunch

- 1 package silken tofu (350g)
- 1/2 cup water
- 3 tbsp olive oil
- 3/4 cup chickpea flour
- 1/4 cup nutritional yeast
- 1/4 tsp sea salt
- 1/2 tsp onion powder
- 3 tbsp oil for cooking
- 2 tbsp chives *Optional
Combine all ingredients in a blender until smooth.
Heat oil over medium heat in a nonstick pan.
Add the mixture, stirring and scrambling with a spatula until golden.
Once fully cooked and dry, serve!
