Copycat Just Egg Chickpea "Egg" Scramble

Make this delicious Just Egg chickpea "egg" scramble for a Sunday brunch

Ingredients
  

  • 1 package silken tofu (350g)
  • 1/2 cup water
  • 3 tbsp olive oil
  • 3/4 cup chickpea flour
  • 1/4 cup nutritional yeast
  • 1/4 tsp sea salt
  • 1/2 tsp onion powder
  • 3 tbsp oil for cooking
  • 2 tbsp chives *Optional

Method
 

  1. Combine all ingredients in a blender until smooth.
  2. Heat oil over medium heat in a nonstick pan.
  3. Add the mixture, stirring and scrambling with a spatula until golden.
  4. Once fully cooked and dry, serve!
