Just Egg Chickpea “Egg” Scramble

If you’re vegan, or frequently cook for other vegans, you’ve probably run into the same egg-related challenges I have. This has led me to experiment with many recipes and come up with this combination of ingredients, spices, and seasonings to create a tasty and filling tofu and chickpea-based “egg” scramble.

Go ahead and indulge in our Copycat Just Egg Chickpea “Egg” Scramble made of silken tofu and chickpea flour. Fluffy, creamy, and nutritious, this egg substitute is the perfect addition to any meal. You can even use it for breakfast sandwiches, an omelet, or even desserts!

Copycat Just Egg Chickpea “Egg” Scramble

Serves: 4

Trying to make a Copycat Just Egg

Ingredients

  • 1 package (350g) silken tofu
  • ½ cup water
  • 3 tbsp olive oil
  • ¾ cup chickpea flour
  • ¼ cup nutritional yeast
  • ¼ tsp sea salt
  • ½ tsp onion powder
  • *Optional:* 2 tbsp chives
  • 3 tbsp oil, for cooking

Preparation:

1. Combine all ingredients in a blender until smooth.
2. Heat oil over medium heat in a nonstick pan.
3. Add the mixture, stirring and scrambling with a spatula until golden.
4. Once fully cooked and dry, serve!
