Vegan Coconut Macaroons

These Vegan Coconut Macaroons are easy to make- just combine all of the ingredients, chuck them into your food processor, bake for a few minutes, and voila! ✨

Sweet, chewy, coconut goodness. Plus, they’re Passover-friendly and free of refined sugar and butter, making them the perfect (last minute) addition to your meal.

Deliciously moist and so delicious, just one bite and you’ll find yourself running back for seconds! 🏃🏻‍♀️

Vegan Funfetti Passover Coconut Macaroons

Serves: 8

Ingredients

  • 2 cups shredded coconut
  • 1 cup slivered almonds
  • ½ cup maple syrup
  • 3 tbsp potato starch
  • Optional: almond extract
  • Pinch sea salt
  • 1 cup white chocolate chips
  • 1 cup sprinkles (kosher for passover, if needed)

 

Preparation:

  1. Preheat the oven to 350F. Grease a baking pan.
  2. Combine coconut, almond, maple and potato starch in a food processor until a rough dough forms. Add 1-2 tbsp water as needed. Add sea salt
  3. Scoop 1 ½ tbsp mixture into balls.
  4. Bake for 9-11 minutes or until golden.
  5. Dip into melted white chocolate and sprinkles, let sit.
  6. Enjoy!
