Vegan Coconut Macaroons
These Vegan Coconut Macaroons are easy to make- just combine all of the ingredients, chuck them into your food processor, bake for a few minutes, and voila! ✨

Vegan Funfetti Passover Coconut Macaroons

2 cups shredded coconut
1 cup slivered almonds
½ cup maple syrup
3 tbsp potato starch
Optional: almond extract
Pinch sea salt
1 cup white chocolate chips
1 cup sprinkles (kosher for passover, if needed)
Preheat the oven to 350F. Grease a baking pan.
Combine coconut, almond, maple and potato starch in a food processor until a rough dough forms. Add 1-2 tbsp water as needed. Add sea salt
Scoop 1 ½ tbsp mixture into balls.
Bake for 9-11 minutes or until golden.
Dip into melted white chocolate and sprinkles, let sit.
