Vegan Funfetti Passover Coconut Macaroons

Sweet, chewy, coconut goodness. Plus, they're Passover-friendly and free of refined sugar and butter, making them the perfect (last minute) addition to your meal.

Ingredients
  

  • 2 cups shredded coconut
  • 1 cup silvered almonds
  • 1/2 cup maple syrup
  • 3 tbsp potato starch
  • Almond extract Optional
  • Pinch sea salt
  • 1 cup white chocolate chips
  • 1 cup sprinkles (kosher for passover, if needed)

Method
 

  1. Preheat the oven to 350F. Grease a baking pan.
  2. Combine coconut, almond, maple and potato starch in a food processor until a rough dough forms. Add 1-2 tbsp water as needed. Add sea salt.
  3. Scoop 1 ½ tbsp mixture into balls.
  4. Bake for 9-11 minutes or until golden.
  5. Dip into melted white chocolate and sprinkles, let sit.
  6. Enjoy!
