In the nutrition world, desserts are always the first things we’re told to “cut out”. But instead of taking them out of our life, what if we added in something to make them a little more nutritious? I love bananas in my desserts. They are so versatile. They can be used to make cakes, bread, or even pies. But one of my favorite ways to enjoy bananas is by using them in a simple dessert recipe like this. It’s creamy, soothing, and delicious! The best part about this recipe is how simple it is to make, just blend, stack, and let sit!

 

 

What’s in my recipe for Vegan Banana Pudding?

The best way to get the most out of this recipe is by using bananas. Bananas provide us with healthy antioxidants that fight against cancer cells as well as a cardiovascular disease while providing energy for your body.

Coconut milk and yogurt provide healthy fats without unhealthy trans fat, which can contribute to cardiovascular disease and liver problems.

Turmeric is healthy for your body as it has anti-inflammatory properties that are good for the heart, gastrointestinal tract, skin, joints, and brain health.

Lastly, feel free to use your favorite vanilla wafers, or try Siete’s delicious grain-free, Mexican wedding cookies (which I’m currently obsessed with!).

Given the impressive ingredient list, low added sugar, and the fact that Siete chips are my love language, I thought they’d be the perfect addition to my Vegan Banana Pudding. Adding these cookies is totally an option, but can certainly dress up your pudding.

Vegan Banana Pudding

Ingredients
Pudding:

  • ½ cup canned coconut milk
  • ½ cup cashews, soaked
  • 3 tbsp maple syrup
  • ½ banana
  • 1 tsp vanilla extract
  • ½ tbsp flaxseeds, ground
  • 1 tsp chia seeds
  • Pinch turmeric
  • Pinch sea salt
  • To assemble
  • 1 ½ bananas, sliced
  • 1 cup coconut yogurt, plain
  • 12-16 vegan cookies or wafers

 

Preparation:

  1. In a high speed blender, combine coconut milk, cashews, syrup, banana, vanilla, flaxseeds, chia seeds, turmeric, and sea salt until smooth.
  2. Let sit for 5-10 minutes, or until thickened.
  3. Layer cookies, banana slices, yogurt and pudding in a glass.
  4. Let sit for 10-15 minutes, or until the cookies soften slightly.
  5. Enjoy!
