Strawberry Halvah Snacking Cake

Serves: 16 to 20

Ingredients

  • 1 ½ cups all purpose flour
  • ½ cup cornmeal
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ¾ cup sugar
  • ½ cup extra virgin olive oil
  • 3 large eggs
  • ¾  cup whole milk yogurt
  • 8oz strawberries, hulled and thinly sliced
  • ¾ cup halvah, crumbled

Preparation:

  1. Preheat the oven to 350F. Line and grease a 9×13 inch baking dish. Metal is best.

  2. In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and kosher salt.

  3. In a medium bowl, combine the sugar, olive oil, eggs, and yogurt. Pour into the dry mixture.

  4. Fold in the strawberries, reserve a handful for garnishing the top, and halvah.

  5. Transfer to the prepared baking dish. Top with reserved strawberry slices.

  6. Bake for 28-33 minutes, or until a toothpick comes out clean.

  7. Let cool completely in the pan.

  8. Slice, and serve.
