Salmon is a delicious fish, and it makes for one hell of a salad. Smoking salmon is one of my favorite ways to prepare it. The smoke permeates the fish and helps keep it moist, while adding a delicious flavor that can’t be beat! Plus smoked salmon, beets, cucumbers, and olives aren’t just delicious together, they’re also highly nutritious.

Smoked Salmon “Cobb” Salad

Serves: 2

Ingredients

  • 3 cups mixed greens
  • ½ cup sliced steamed beets
  • ½ cucumber, sliced
  • ⅓ cup corn, canned or frozen
  • ¼ cup olives, sliced
  • ¼ cup feta cheese, crumbled
  • 1 green onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1 filet hot smoked salmon, flaked
  • 1 tbsp fresh dill, chopped
  • Dressing of your choice

Preparation:

  1. Combine all ingredients in a bowl, toss with dressing
  2. Enjoy!
