Pumpkin Cinnamon Rolls

Makes: 12

Ingredients

  • 1/2 cup whole or 2% milk, warm
  • 3 tablespoons granulated sugar
  • 1, 7g package instant dry yeast (2 ¼ teaspoon)
  • ¾ cup pumpkin puree
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, at room temperature
  • 1 egg yolk, at room temperature
  • 3 ¼ cups all purpose flour
  • 4 teaspoons pumpkin pie spice
  • ½ teaspoon kosher salt
  • Oil, for greasingFilling:
  • 6 tablespoons unsalted butter, at room temperature
  • ½ cup brown sugar
  • 1 tablespoons pumpkin puree
  • 1 teaspoon cinnamon
  • 4 teaspoons pumpkin pie spice

Cream Cheese Frosting:

  • 4 oz unsalted butter, at room temperature
  • 4 oz cream cheese, at room temperature
  • 1 cup icing sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • ⅛ teaspoon cardamom
  • ⅛ teaspoon sea salt

Make the dough:

  1. In a large bowl, or the base of your stand mixer, combine the milk, yeast, sugar, and pumpkin puree, mixing until well combined using the paddle attachment or a whisk.
  2. Add the egg and egg yolk, mixing until incorporating.
  3. Attach the dough hook to the stand mixer. Add the flour, pumpkin pie spice, and salt, mixing on low for 5 to 7 minutes, or until a soft dough forms. Lightly grease a large bowl with vegetable oil. Place the dough in the bowl and cover with a damp towel or plastic wrap, placing it in a warm place to rise for 1 hour, or until doubled.
  4. While the dough is rising, generously grease a 9×13-inch baking dish. Set aside.

Make the filling:

  1. In a medium bowl, mix the butter, brown sugar, pumpkin puree, cinnamon, and pumpkin pie spice.
  2. Once the dough has risen, punch it down, and tip onto a well-floured surface. Use a rolling pin to roll into a large rectangle, about 12×16-inches. Use an offset spatula to spread the filling over the dough in an even layer.
  3. Starting at the longer end, tightly roll the rectangular dough into a log. Using a sharp knife or unflavored dental floss, slice into 12 even rolls, about 1 ½ inches wide. Arrange the rolls in the prepared baking dish. Cover with a kitchen towel or plastic wrap, and let rise for 30 to 45 minutes.
  4. Meanwhile, preheat the oven to 350F.
  5. Bake the cinnamon rolls for 24 to 28 minutes or until golden. If they are browning to quickly, place a loose piece of aluminum foil over top after 15 minutes of baking. When fully cooked, remove the pan from the oven and let cool to room temperature on a wire rack.
  6. While cooling, make the frosting. Combine the butter and cream cheese in a bowl or in the base of a stand mixer.
  7. Whip until light and fluffy on medium speed, about 3 to 4 minutes.
  8. Add the icing sugar, lemon juice, vanilla, cardamom and salt, mixing on high until smooth.
  9. Spread the icing over the cooled pumpkin cinnamon rolls. Serve.
