Israeli Salad with Bagel Croutons

Serves: 2

Ingredients

  • 1 pint cherry tomatoes, halved
  • 1 english cucumber, chopped
  • ¼ red onion, finely chopped
  • ⅔  cup parsley
  • 1 tsp sumac
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Croutons:
    – 1 bagel, thinly sliced
    – 2 tbsp olive oil
    – 1 tbsp za’atar
    – Sea salt and pepper

Preparation:

  1. Preheat the oven to 350F.
  2. Toss the bagel slices with olive oil, za’atar, salt and pepper. Spread evenly on a baking tray.
  3. Bake for 10-13 minutes or until crisp.
  4. Combine all salad ingredients in a bowl.
  5. Top with croutons.
  6. Enjoy!
