What to do with holiday leftovers

Does anyone else feel blue after the holidays have ended? Just me? I always feel a rush of excitement, anxiety, and anticipation before the holiday season. Afterwards, I’m left feeling like… so, what now!? I’m looking for ways to savour the holidays a little while longer, including eating leftovers past the acceptable length of time. This year, I’m tucking into Holiday Leftovers Pizza instead of plopping all my meal fix-ins into yet (another) bowl.

I take weeks to plan a holiday meal. In fact, the moment Halloween ends, I’ve already begun planning my Christmas/Hanukkah menus. I stew over the menu for weeks. I ask around for everyone’s favourite dishes, least favourite dishes, and scour the internet to find new and exciting ideas. Not only that, I look for what’s in season, and what I have in the cupboard before settling on a menu.

I also often make last minute changes, and they are typically out of fear for not having enough food. In my kitchen, if you don’t have leftovers for days, you didn’t make enough. I don’t know how the fear of running out was instilled in me, or perhaps I just know that future me will be too lazy to make lunch, but leftovers are a key part of my life. I love them. I don’t even have them warmed up (weird, I know).

Instead of throwing my leftover sides into a big bowl, I’ve decided to do something a little more special. This year, I’ve picked up some pizza bases (or use naan bread, or make your own dough), and top it with leftover cranberry sauce, veg, cheese, and a touch of sage and pomegranate. It’s the easiest, most exciting way to repurpose leftovers. Top with whatever you have on hand – I reckon turkey and stuffing would be quite the delicious addition on this Holiday Leftovers Pizza!

Holiday Leftover Pizza

Got leftovers? Use them up and put them by making a festive pizza to make the holidays last even longer! It barely needs a recipe – but save this to remind yourself!

Ingredients

  • 1 pizza base fresh/frozen dough, naan bread, or pita
  • 2 tbsp cranberry sauce
  • 1/2 cup mozzarella chees

 

Toppings

  • cooked Brussels sprouts
  • sage leaves, chopped
  • pomegranate seeds
  • Other leftovers – turkey, potatoes, be creative!

 

Instructions

  1. Preheat oven to 190C
  2. Line a tray with baking paper.
  3. Add toppings to pizza base, bake until base is crisp and cheese has melted.
  4. Top with with sage leaves and pomegranate.
