Hearty Bean and Nut Loaf

“Where do you get your protein?” A common question I used to get as a vegetarian. But that before vegetarian eating was considered somewhat mainstream. I used to list off a memorized verse of plant-based proteins, and everyone got stuck on “I HATE TOFU”, or “isn’t it bland?” My new answer? This hearty Bean and Nut Loaf.

Vegan Bean & Nut Loaf

Plant-based proteins don’t have to be bland. It’s not all tofu in the world of vegetarian protein. Foods like beans and nuts are great ways to get protein in a plant-based diet. I’ve combined the two into a hearty bean and nut loaf perfect for anything from weeknights to holiday meals.

In the world of processed vegan burgers, you can eat enough plant-based proteins without relying on heavily processed foods- as long as you have the time to plan. Yes, veggie burgers can be tasty, but there are a TON of ingredients that make me say: HUH?! Let’s get back to the basics of legumes, nuts, seeds, tofu (yes – still a basic!), and tempeh. And let’s start it off with a hearty, filling loaf that will convince your meat-loving friends.

Hearty Bean and Nut Loaf

Cook Time:30 mins
Total Time: 50 mins
Servings: 8 servings

Ingredients

  • 1, 400g tin cannelini beans, drained
  • 1/4 cup oats
  • 1/2 cup mixed nuts, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup flaxseeds (linseeds)
  • 1 tsp smoked paprika
  • 1/4 tsp coriander
  • 1/4 tsp vegetable bouillon
  • 2 Tbsp ketchup
  • 1 Tbsp olive oil
  • 1/2 cup white onion, chopped
  • 1/4 cup carrots, grated
  • 2 cloves garlic, minced
  • salt & pepper to taste

 

Instructions

  1. Preheat oven to 200C/400F. Line a loaf pan with baking paper
  2. In a food processor or blender, pulse white beans until softened. Transfer to a medium bowl. Add quick oats, nuts, seeds, paprika, coriander, bouillon and ketchup. Mix to combine.
  3. Meanwhile, heat olive oil in a pan over medium heat. Cook onion, carrots and garlic until softened. Add to bean and nut mixture.
  4. Press into loaf pan. Bake for 30 minutes.
