COPY CAT STARBUCKS CHICKPEA BITES

Raise your hand if you’re a big fan of the Starbucks protein boxes! Starbucks’ latest chickpea bites are all the rage. They are a great vegetarian snack option for on the go, but might not hit the spot between price and taste… If you are looking for a better (read: cheaper AND tastier!) version, look no further. I pumped up the Starbucks’ chickpea bites to be full of flavor with a ton of spices and a crispy sesame coating. These chickpea bites are protein packed with chia seed, hemp seeds, and nutritional yeast.

 

 

Why should I add hemp-seeds to my diet?

Hemp seeds are a great protein source that is jammed with omega-3s, fiber, and magnesium. It’s so easy to amp up your meal with just a sprinkle of hemp seeds.

Not only are they delicious, these chickpea bites are soooo easy to make. All you have to do is pop all the ingredients into a food processor, roll them in sesame seeds, and put them in the air fryer or oven. And viola you have a crispy, delicious treat in just under twenty minutes!

Copy Cat Starbucks Chickpea Protein Bites

Makes: 16 bites

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cloves garlic, chopped
  • 2 tbsp parsley
  • 1 tsp cumin, ground
  • 1 tsp paprika
  • ½ tsp coriander, ground
  • 2 tbsp all purpose flour
  • ÂĽ cup hemp seeds
  • 2 tbsp chia seeds
  • 1 tbsp olive oil
  • Juice of 1 lemon

 

Coating:

  • ÂĽ cup sesame seeds
  • 2 tbsp nutritional yeast
  • ÂĽ tsp sea salt
  • ÂĽ tsp cumin
  • ÂĽ tsp paprika

 

Preparation:

  1. Combine chickpeas, garlic, parsley, cumin, paprika, coriander, flour, hemp seeds, chia seeds, olive oil and lemon juice in a food processor, pulse until a rough down forms.
  2. Roll into 16 balls.
  3. In a shallow dish, combine sesame seeds, nutritional yeast, sea salt, cumin, and paprika.
  4. Roll balls in the sesame seed mixture.
  5. Add to an air fryer, and spray liberally with cooking spray.
  6. Air fry for 350F for 10 minutes.
  7. Enjoy!
