Copy Cat Starbucks Chickpea Protein Bites
If you are looking for a better (read: cheaper AND tastier!) version, look no further. I pumped up the Starbucks’ chickpea bites to be full of flavor with a ton of spices and a crispy sesame coating. These chickpea bites are protein packed with chia seed, hemp seeds, and nutritional yeast.
- 1 can chickpeas, drained and rinsed
- 2 cloves garlic, chopped
- 2 tbsp parsley
- 1 tsp cumin, ground
- 1 tsp paprika
- 1/2 tbsp all-purpose flour
- 1/4 cup hemp seeds
- 2 tbsp chia seeds
- 1 tbsp olive oil
- Juice of 1 lemon
- 1/4 cup sesame seeds Coating
- 2 tbsp nutritional yeast Coating
- 1/4 tsp sea salt Coating
- 1/4 tsp cumin Coating
- 1/4 tsp paprika Coating
Combine chickpeas, garlic, parsley, cumin, paprika, coriander, flour, hemp seeds, chia seeds, olive oil and lemon juice in a food processor, pulse until a rough down forms.
Roll into 16 balls.
In a shallow dish, combine sesame seeds, nutritional yeast, sea salt, cumin, and paprika.
Roll balls in the sesame seed mixture.
Add to an air fryer, and spray liberally with cooking spray.
Air fry for 350F for 10 minutes.
