Yep, you read that right. Sweet and crispy apple cider donuts meet soft and fluffy pancakes. Trust me, it works! Once you start eating these Apple Cider Donut Pancakes, it’s hard to put the fork down!

Actually, feel free to ignore the breakfast part too. Pancakes for breakfast are fantastic but pancakes for dessert are life-changing.

Apple Cider Donut Pancakes

Makes: 16 pancakes

Ingredients

  • 1 ½ cups apple cider (or juice)
  • 3 large eggs
  • 3 tbsp vegetable oil or melted butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 ¾ whole wheat flour
  • ¼ cup all-purpose flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp baking powder
  • 1/4 tsp baking soda

 

Preparation:

  1. In a medium bowl, whisk the apple cider, eggs, vegetable oil, vanilla, and maple syrup.
  2. In a separate bowl, combine flours, cinnamon, nutmeg, baking powder and sbaking soda.
  3. Add wet to dry mixture, stirring until just combined.
  4. Heat a nonstick pan over medium heat with butter or oil. Use a ¼ cup measure to portion pancakes, flipping when bubbles start to form.
  5. Enjoy!
