- In a medium bowl, whisk the apple cider, eggs, vegetable oil, vanilla, and maple syrup.
- In a separate bowl, combine flours, cinnamon, nutmeg, baking powder and baking soda.
- Add wet to dry mixture, stirring until just combined.
- Heat a nonstick pan over medium heat with butter or oil. Use a ΒΌ cup measure to portion pancakes, flipping when bubbles start to form.
