Apple Cider Donut Pancakes

What do you get when you combine classic Apple Cider Donuts with fluffy pancakes? This simple yet insanely delicious breakfast donut pancakes recipe.

Ingredients
  

  • 1 1/2 cups apple cider (or juice)
  • 3 large eggs
  • 3 tbsp vegetable oil or melted butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1/4 cup all-purpose flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp baking powder
  • 1/4 tsp baking soda

Method
 

  1. In a medium bowl, whisk the apple cider, eggs, vegetable oil, vanilla, and maple syrup.
  2. In a separate bowl, combine flours, cinnamon, nutmeg, baking powder and baking soda.
  3. Add wet to dry mixture, stirring until just combined.
  4. Heat a nonstick pan over medium heat with butter or oil. Use a ΒΌ cup measure to portion pancakes, flipping when bubbles start to form.
