Method
- Brush each slice of halloumi with olive oil.Season with salt and pepper.
- Heat a nonstick grill pan over medium heat.
- Add the cheese to the pan, cook for 2-3 minutes on each side, or until you get grill marks.
- Set aside.
- Combine halloumi, watermelon, arugula, and mint. Sprinkle with za’atar, lemon juice and additional olive oil.
- Enjoy!
