Watermelon Halloumi Salad

This juicy, sweet, and refreshing watermelon salad is the perfect summer staple!

Ingredients
  

  • 1 block Halloumi sliced into 1/4 inch thick pieces
  • 1 tbsp olive oil
  • 4 cups cubed watermelon
  • 4 cups arugula
  • 1/2 cup mint leaves torn
  • 2 tsp za'atar
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • Sea salt and pepper to taste

Method
 

  1. Brush each slice of halloumi with olive oil.Season with salt and pepper.
  2. Heat a nonstick grill pan over medium heat.
  3. Add the cheese to the pan, cook for 2-3 minutes on each side, or until you get grill marks.
  4. Set aside.
  5. Combine halloumi, watermelon, arugula, and mint. Sprinkle with za’atar, lemon juice and additional olive oil.
  6. Enjoy!
