Vegan Funfetti Passover Coconut Macaroons
Sweet, chewy, coconut goodness. Plus, they're Passover-friendly and free of refined sugar and butter, making them the perfect (last minute) addition to your meal.
- 2 cups shredded coconut
- 1 cup silvered almonds
- 1/2 cup maple syrup
- 3 tbsp potato starch
- Almond extract Optional
- Pinch sea salt
- 1 cup white chocolate chips
- 1 cup sprinkles (kosher for passover, if needed)
Preheat the oven to 350F. Grease a baking pan.
Combine coconut, almond, maple and potato starch in a food processor until a rough dough forms. Add 1-2 tbsp water as needed. Add sea salt.
Scoop 1 ½ tbsp mixture into balls.
Bake for 9-11 minutes or until golden.
Dip into melted white chocolate and sprinkles, let sit.
