Thai Green Curry Chickpea Tacos

Tacos.

One word, thousands of combinations, and made for endless celebrations. There is no food loved more than tacos.

I made this recipe for Ninja, who makes kitchen and home appliances. It was #gifted a Ninja Foodi, an all-in-one machine that is an air-fryer, slow cooker, pressure cooker, and steamer. I was skeptical at first, because with limited counter space, the last thing I need is clutter. BUT I’ve been using this consistently for about 6 months, and I am officially obsessed.

A favourite recipe using the air-fryer function is crispy chickpeas. In the oven, crispy chickpeas take ages, and never get fully crispy. But in this, within 20 minutes, they are perfectly crunchy chickpea snacks. I’ve made them with cinnamon and sugar, with paprika and garlic, but my favourite way to make them is with green curry paste, and popping them into tacos.

Thai Green Curry Chickpea Tacos

Prep Time: 20 min
Serves: 6

Ingredients

  • For the Crispy Thai Green Curry Chickpeas
  • 200g dried chickpeas, soaked overnight in water and drained
  • 1.5 litres water
  • 1 tbsp melted coconut oil
  • 1 tsp green curry paste
  • For the mango salsa
  • 100g chopped mango
  • 25g red onion, finely chopped
  • 75g cherry tomatoes, quartered
  • 1/2 tsp lime zest
  • Juice of 1 lime

 

To serve:

  • Corn tortillas
  • Avocado, sliced
  • Coriander, chopped
  • Radishes, sliced
  • Fresh lime wedges

 

Instructions

  1. Combine the chickpeas and water in the pot of the Foodi
  2. Assemble the Pressure Lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set the temperature to LOW. Set time to 3 minutes and select START/STOP to begin
  3. When cooking is complete, carefully quick release the pressure by turning the valve to the VENT position
  4. Drain the chickpeas and excess water from pot
  5. Toss with melted coconut oil and green curry paste. Place in the air fryer basket
  6. Select AIR CRISP and set temperature to 200C. Set time to 15 minutes, and select START/STOP to begin
  7. Make the salsa: Combine all ingredients into a medium bowl, cover, and keep refrigerated
  8. Add all ingredients into tortillas, serve and enjoy!
