Tahini Broccoli Salad

My tahini agenda is back in full force!

Most of you know that I’ve been trying to get everyone to hop on to the tahini train, and I’m happy to announce that the plan has been going super smoothly so far.

I know, I’ve changed your lives. Opened your eyes and all that. You’re absolutely welcome.

Next phase of the plan? Sharing this simple but delicious Broccoli Salad elevated with the best creamy and healthy tahini dressing. A crunchy, fresh salad that comes together in a flash that is practically made for your summer potluck.

Who says broccoli salad has to be boring?! This is NOT your average mayo-laden broccoli salad, this I promise you. If anyone’s giving you trouble for wanting to indulge in a delicious bowl of fresh veg, whip up a serving of this recipe to prove them all wrong. They were probably the type to hate it when their parents urged them to eat their veg growing up, but no hate! Everyone just needs a life-changing nudge in the right direction.

Creamy and healthy tahini dressing just makes this salad so much better. Tahini and lime is a magical combination, and a drizzle goes a long way. Plus since tahini is packed with Vitamin E, it gives you an extra dose of protein and fiber. Proof that vegan salads are delicious, healthy, and flavorful.

This Tahini Broccoli Salad is leagues above the bland and boring broccoli people probably had as a kid. Trust me when I say that kids will actually love this recipe, making it perfect for family outings or picnics this summer!

And if you like raisins in your salad, look away. Because my based take of the day is that I actually love the fact that this recipe doesn’t have raisins. We’re all about breaking norms after all!

New to making salad and/or tahini? Don’t worry, this Tahini Broccoli Salad recipe is fail-proof! Broccoli is a pretty sturdy veg and can withstand all sorts of experimentation. And since it’s sturdy, you can actually make this the morning or night before you need or want to eat it. Shelf life’s pretty good too and will actually only taste better. Great for meal prep!

Tahini Broccoli Salad

Serves: 4-6

Ingredients

  • 1 medium sweet potato, cut into ½ inch pieces
  • 1 tbsp olive oil
  • 1 head broccoli, cut into florets
  • ½ english cucumber, chopped
  • ½ cup cilantro, chopped
  • ¼ cup pumpkin seeds
  • 2 tbsp pickled jalapenos, chopped
  • 1 medium granny smith apple, chopped
  • Salt and pepper, to taste

 

Tahini Dressing:

  • 3 tbsp tahini
  • 1 tsp lime zest
  • Juice of 2 limes
  • 1 tsp honey
  • ½ tsp dijon mustard
  • ¼ cup water (plus more, if needed)
  • 1 shallot, finely chopped (or ¼ cup red onion)

 

Preparation:

  1. Preheat oven to 400F. Line a tray with baking paper.
  2. Add sweet potatoes to the tray, drizzle with olive oil, salt and pepper. Roast for 15-20 minutes or until tender.
  3. Meanwhile, combine broccoli, cucumber, apple, pumpkin seeds, and jalapenos in a large bowl.
  4. In a jar, combine tahini, lime zest, juice, honey, mustard, and water, shaking to combine. You may need to add additional water as it will thicken over time.
  5. Add sweet potatoes to the bowl. Drizzle with dressing. Top with cilantro before serving.
  6. Serve.
