Shaved Asparagus Salad
I love asparagus. Even as a kid asparagus was a favorite veggie on the dinner table, and we all looked forward to summer to enjoy it. In spirit of asparagus, I made this shaved asparagus salad. A bright, summery salad that is ready in no time, filled with rich pistachios, zippy lemon and grassy asparagus!

Choosing asparagus:
When choosing asparagus, choose thinner stalks. They'll be tender, sweet, grassy and full of flavor. Large, thick asparagus can be "woody" and stringy.

If you've ever wondered how to cook asparagus - let me ease your mind - don't cook it! You CAN eat asparagus raw, it's actually one of my favorite ways to enjoy this delicious vegetable.Raw asparagus is actually good for you, and a great way to include asparagus into your diet!
But in reality, asparagus is super versatile - it can be roasted, grilled, steamed, added to stir fries, or raw.

Shaved Asparagus Salad
Prep Time: 15 mins
Serves: 2-4
Ingredients
1/2 lb asparagus shaved (250g)
¼ cup chopped parsley
¼ cup Shaved parmesan
Juice of 1 lime
Zest of 1 lime
2 tbsp olive oil
Sea salt
2 tbsp chopped pistachios
Instructions
Combine asparagus, parsley, and parmesan in a bowl.
Whisk together lime juice, zest, olive oil, and salt. Pour over asparagus.
Toss shaved asparagus with dressing, top with pistachios
