Pinch me, right? I know this looks and sounds too good to be true but this funfetti cake is definitely kosher for Passover. The Passover recipe book of my bubbe’s generation was written with strict guidelines: no flour, no eggs, and no leavening agents–not too many choices for cake! Passover was usually all about showcasing the delicious flavors and textures of matzo, but sometimes you might feel a need to mix things up a bit.

Times have changed, and being a bit creative with almond flour definitely pays off! Here’s a rainbow-sprinkled cake that’s rich, decadent, and delicious. It’s great for your holiday seder or anytime throughout the year.

Passover-friendly Almond Funfetti Cake

Cooking Time: 45 minutes

Ingredients

 

Preparation:

  1. Preheat the oven to 325°F. Grease and line a loaf pan.
  2. In a medium bowl, whisk approximately half the sugar, egg yolks, lemon zest, vanilla extract, almond extract, and sea salt.
  3. In a large mixing bowl, combine almond flour and baking powder
  4. Add egg yolk mixture to the flour mixture, the dough will be thick.
  5. Using a hand mixer, whip the egg whites and sugar until soft peaks form.
  6. Gently fold in egg whites, ½ cup at a time into the almond flour mixture until a batter forms.
  7. Gently fold in sprinkles.
  8. Transfer to the loaf pan.
  9. Bake for 40-45 minutes or until a toothpick comes out clean.
  10. Let cool in the pan before serving.
  11. Enjoy!

  • 1/3 cup sugar, divided
  • 1 tsp lemon zest
  • 1 tbsp vanilla extract
  • 1 tsp almond extract
  • 2 1/2 cups almond flour
  • 1 tbsp baking powder
  • 1/4 tsp sea salt
  • 1/3 cup sprinkles, kosher for Passover

Instructions
 

  • Preheat the oven to 325°F. Grease and line a loaf pan.
