Orange Creamsicle Baked Oats

Makes: 12

Ingredients

  • 1/2 cup orange juice
  • 1 cup non-dairy milk
  • 1/4 cup ground flax
  • 1/4 cup chia seeds
  • 2 cups rolled oats
  • 1/2 cup chopped cashews
  • 1/4 cup unsweetened coconut
  • 1/4 cup orange marmalade
  • 1 orange, zested
  • 1 tsp vanilla extract
  • 1/4 c. cashew butter
  • 1-2 oranges, thinly sliced

 

Preparation:

  1. Preheat oven to 350F/176C. Lightly grease a muffin tin.
  2. In a large bowl, combine orange juice, milk, flax, and chia seeds. Let sit for 3-5 minutes
  3. Add oats, cashews, coconut, marmalade, zest, vanilla, and cashew butter.
  4. Portion into 12 muffin cups, topped each with a thin slice of range.
  5. Bake 15-20 minutes, or until golden brown and fully set.
