Traditionally, we eat the “Seven Species” of Israel, including dates, figs, olives, grapes, barley, wheat, and pomegranates. This Olive Oil Date Granola recipe celebrates these foods but can be topped with your favorite, seasonal fruits no matter the season.
The best part about homemade granola is that you get to decide what goes inside it. Ingredients matter. For this recipe, we're throwing in almonds, chia seeds, flaxseeds, and walnuts! Mix in coconut and sweeten with cinnamon, and you’ve got yourself a tasty treat that is sure to prove addicting.
Olive Oil and Dates Granola

2 cups rolled oats
2 tsp cinnamon
1 tsp ginger
¼ tsp cardamom
1 cup almonds
½ cup chia seeds
½ cup flaxseeds, whole
½ cup coconut, shredded, unsweetened
½ cup walnuts
¼ cup olive oil
¼ cup date syrup
½ tbsp aquafaba powder (or 1 egg white)
1 tbsp water
Preheat the oven to 275F. Line a large tray with baking paper
In a large bowl, combine oats, cinnamon, ginger, cardamom, almonds, chia seeds, flax seeds, coconut, and walnuts
In a medium bowl, combine olive oil, date syrup, aquafaba, and water.
Pour wet mixture over dry.
Spread into an even layer on the baking tray.
Bake for 40 - 50 minutes, string every 15 minutes, or until golden and dry. Store in an airtight container.
