Olive Oil Chocolate Chunk Oatmeal Cookies

My husband is obsessed with chocolate chip cookies. Like truly loses all control when it comes to cookies. While I'm all for him honouring his cravings and listening to his body, I am also a dietitian at heart, and want to make sure that he's not only eating mindfully, but eating things that don't end with him on the tail end of a sugar rush. Things like these Olive Oil Chocolate Chunk Oatmeal Cookies, which are just sweet enough to satisfy a sweet tooth, but not so sweet that you're passed out on the couch an hour later.
Let's face it, dessert is dessert. And sugar is sugar, and while I'm all about eating intuitively, I'm also aware of how eating too much sugar makes me feel (again, we are all different!). So I do enjoy trying to make my favorite treats a little lower in sugar.
I made these oat flour cookies at home during COVID-19 quarantine -I was looking for a healthy-ish cookie I could enjoy while I was stuck at home and moving a LOT less than I'm used to. These cookies aren't too sweet (I also used extra dark chocolate, so even less sweet!), and I'm convincing myself that it's basically a bowl of oatmeal so I can eat them for breakfast. Because oats = breakfast = the picture of health... right?
Note these cookies are gluten free, so they may crumble a little bit, if you want to reduce crumbly-ness, you can add an extra egg yolk to the batter.
Chocolate Chunk Oatmeal Cookies

1 1/2 cups oat flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
pinch sea salt
1/3 cup olive oil
1/3 cup maple syrup
1 tsp vanilla extract
1/2 cup rolled oats
1 cup chopped dark chocolate, reserve 12 chunks.
Preheat oven to 350F/176C. Line a baking tray with parchment paper.
In a bowl, combine oat flour, baking powder, baking soda, cinnamon and sea salt.
In a separate bowl, whisk together egg, oil, maple syrup, and vanilla. Add to dry ingredients.
Add chocolate and oats to mixture. Stir to combine.
Let sit for 10-15 minutes.
Scoop out 12 cookies. Top each with an additional chunk of chocolate. Sprinkle with sea salt.
Bake for 8-10 minutes.
Remove from oven and "whack" the tray on the counter to flatten.
Let cool before eating.
