Matcha Coconut Overnight Oats

Tis the season to be cozy and eat oats! Santa’s running behind schedule and you need to be ready for the holidays but don’t fret – overnight oats are here to save the day.

My present to you is this overnight oats recipe that I swear tastes like a mini holiday.

 

 

Overnight oats are a tasty, well-balanced breakfast in a jar! The best part is they only take a few simple steps to make and can be eaten cold without having to fire up the stove. These healthy and delicious overnight oats are sure to give you just the right amount of comfort and boosts of energy you need to power through all the things this holiday season. And while matcha may be an acquired taste, with this recipe you’ll make it your own.

Don’t worry about the holiday rush because overnight oats are probably the simplest holiday breakfast you can make. Add the ingredients to any of your trusty jars and refrigerate overnight – or a few hours at least. Either make them into separate jars or make a big batch and divvy into containers every morning, there is no wrong way to make them.

Matcha Coconut Overnight Oats

Serves: 1

Ingredients

  • ⅓ cup rolled oats
  • 2 tbsp coconut flakes, unsweetened
  • 1 tbsp chia seeds
  • 1 tsp matcha powder
  • ½ tbsp flax seeds
  • 1 scoop vanilla protein powder (I use Orgain, plant based)
  • ¾ cup coconut milk
  • 1 tsp vanilla extract

 

Preparation:

  1. Add all ingredients to a jar or container.
  2. Shake and let sit in the fridge overnight.
  3. Enjoy!
