I love muffins as much as the next person, but I personally think lemon poppy seed taste great as its less popular variations too- scones, cakes, bread… so many possibilities. If it’s bursting with fresh lemon juice, zest, and poppy seeds, then you know it’s going to taste good.

Rethink that granola bar you were going to have for breakfast because today we’re making lemon poppyseed donuts. Protein donuts!

 

 

Protein donuts are the perfect on-the-go snacks. They look and sound too good to actually be healthy, but they can give your body enough protein to keep you full, as well as carbs for energy. BUT protein donuts can be tricky to make because protein powder somehow almost always makes them dry or dense, or just not quite right. Trust me, I know.

But I promise this recipe’s going to be a good one.

I mean, how can you go wrong with lemon poppyseed?

Lemon and maple syrup adds a touch of sweetness to slightly savory poppy seeds, making everything come together to make donuts that taste like sunshine. You’d never guess that these little donuts are healthy and packed with protein in every delicious bite!

These Lemon Poppyseed Protein Donuts are free of gluten, dairy, and refined-sugar and they’re super easy to make. Plus you’ll get an extra serving of fiber from coconut flour, which is always a good thing especially if your household’s filled with active, busy bees.

I always pull out this Lemon Poppyseed Protein Donuts recipe whenever I’m craving for something lemony, sweet, and filling, so I hope you’ll love these vegan donuts as much as I do. Lemon Poppyseed Protein Donuts

Ingredients

  • ¾ cup all purpose flour
  • ½ cup plant based vanilla protein powder
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 large egg
  • ½ cup unsweetened plant based milk
  • ¼ cup greek yogurt, plain
  • 2 tbsp maple syrup
  • 2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, melted

 

Preparation:

  1. Preheat the oven to 350F. Generously grease a donut pan.
  2. In a medium bowl, combine flour, protein powder, poppy seeds, baking powder, and baking soda.
  3. In another bowl, whisk the egg, milk, yogurt, syrup, zest, juice, vanilla, and coconut oil. Pour into the dry mixture, stirring to combine.
  4. Pipe into the donut pan.
  5. Bake for 10-12 minutes

    I’d love to make these doughnuts–but I don’t use protein powder or coconut oil.
    Would it work to sub canola oil for the coconut oil?
    Could I use buttermilk powder instead of the protein powder?

      Butter would be a better substitute for the coconut oil.

      For protein powder, I haven’t tried it with anything else – if you try, please let me know!!!
