Funfetti Collagen Donuts

Raise your hands if you’ve ever snuck a box of Funfetti into your grocery carts when you were younger. Or at least drowned your sorrows in a bucket of rainbow sprinkles.

Plus points if you snuck a box of Funfetti last week, as a perfectly functioning adult, while your husband wasn’t looking.

I’m not saying that that was me, but I’m also not saying that it wasn’t. You’re welcome to drop your guesses though.

Anyways, I come bearing good news- today is National Donut Day! And in celebration of this amazing holiday that I wholeheartedly support, I’m sharing this Funfetti Collagen Donut recipe.

Funfetti = cake, I know, but what if it wants to be a donut too? Who am I to say no to making its dreams (and mine) come true?

These homemade Funfetti Collagen Donuts are super easy to make and will be a big hit with both kids and grownups. Kids will love them because they taste great, adults will love them because they taste great AND have collagen- which means they’re full of the popular supplement that may have anti-aging and help with digestive health and joint pain.

I’ve been trying out collagen to see if it (ANECDOTALLY) helps my stress-induced hair problems… fingers crossed for prettier hair, skin, and nails while eating sweets… note that studies on collagen are still needed, but I’m at my wits end with my hair! Anyone else?!

These Funfetti Donuts may look unhealthy, but they aren’t. I promise. The best proof of this is that donuts from big brands are usually fried, but these are baked and a bit more healthy for you. Rainbow sprinkles can be deceiving!

Funfetti Collagen Donuts

Makes: 9

Ingredients

  • 1 ½ cups oat flour
  • ½ cup almond flour
  • 3 scoops collagen powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup sugar (or monk fruit)
  • 3 large eggs
  • ½ cup unsweetened plant based milk
  • ¼ cup greek yogurt, plain
  • 2 tsp vanilla extract
  • ½ tsp almond extract
  • ¼ cup rainbow sprinkles

 

Preparation:

  1. Preheat the oven to 350F. Generously grease a donut pan.
  2. In a medium bowl, combine flours, collagen, baking powder, and baking soda.
  3. In another bowl, whisk the sugar, eggs, milk, yogurt, vanilla, and almond extract. Pour into the dry mixture, stirring to combine.
  4. Gently fold in the sprinkles
  5. Pipe into the donut pan.
  6. Bake for 10-12 minutes
  7. Enjoy!
