In my house, Sunday's are reserved for a big fat pancake stack... until I bought myself a waffle maker. It was a true impluse buy one fateful Friday night (possibly after a few sips of my favorite wine), but I haven't looked back since. The catch? I never really made many waffles before this point in my life.
When I approach making a meal for my family, I want it to taste delicious, make us feel good, and be simple enough to create before I've had my 10+ coffees. That's why this flourless peanut butter oat waffle recipe is the end-all-be-all waffle recipe. Seriously, everything is just blended up, and poured right into the waffle maker.
The best part? These waffles freeze well, meaning you can batch prep for the week, and be the envy of your office when you sit there munching on homemade waffles.

Flourless Peanut Butter Oat Waffles

Ingredients
1 c. oats
1 ripe banana
1/4 c. peanut butter
2 eggs
1/2 c. milk
1 tsp baking powder
1/2 tsp lemon juice
1/4 tsp lemon zest
1 tsp vanilla extract
Instructions
Combine all ingredients in a blender, blend until smooth
Cook according to your waffle maker's instructions
