Curry Turmeric Cauliflower Steak

This is not just another roasted cauliflower recipe. It’s more than that. It’s spicy, it’s sweet, and it’s yellow AF. I’m taking cauliflower and calling it steak, because if it can be pizza, it can be anything. Lately, I’ve been on a cauliflower steak KICK, and I’m here for it. There’s something magically delicious about the crispy and caramelized little floret tendrils, and it makes the perfect centrepiece of your dish. Cauliflower got the glow up that I’ve been waiting 28 years for. It used to be the ugly, bumpy cousin to bright broccoli, and now it’s selling for 5x the price it should be, and is being added into all my favorite foods (hello pizza, gnocchi, and rice). Seriously, who does the PR for cauliflower?

Regardless of my feelings of envy towards cauliflower, I’m digging the new ideas and inspiration. Seriously, if you can get husbands across the globe to ASK for cauliflower pizza, you deserve a round of applause. And if we can get people ordering cauliflower steaks, or checking out some vegan cauliflower steak recipes, we done well. Our tummies and planet will thank us.

Curry Turmeric Cauliflower Steak

Total time: 45 min
Serves: 4

Ingredients

  • 1 head cauliflower, cut into 4 “steaks”
  • 2 tbsp coconut oil
  • 2 tsp curry powder
  • 1/2 tsp turmeric
  • Pinch sea salt
  • 1 orange chopped
  • 2 tbsp fresh mint, chopped
  • 1 tbsp coconut flakes
  • 2 tbsp pistachios, chopped
  • 1 lime, zested and juiced

 

Instructions

  1. Preheat oven to 180C(350F). Line a tray with baking paper.
  2. In a pan over medium high heat, melt coconut oil.
  3. Cook cauliflower “steak” for 5 minutes (or until caramelised) on each side.
  4. In a small bowl, combine curry powder, turmeric and salt, sprinkle over cauliflower.
  5. Transfer cauliflower to baking tray, bake for 10-15 minutes.
  6. Sprinkle with cut orange, mint, coconut, pistachios, lime juice and zest.
