Creamy Low-Carb Cauliflower Mash

Serves: 4

Ingredients

  • 1 head cauliflower, cut into florets
  • 4 cloves garlic, whole
  • 1 sprig thyme
  • 3 tbsp goat cheese
  • 1 tsp lemon zest
  • Sea salt and pepper, to taste

 

Preparation:

  1. Place the cauliflower, garlic and thyme in a steamer basket. Cook, covered for 20-25 minutes or until the cauliflower is very soft.
  2. Remove the thyme, and transfer to a food processor with goat cheese and lemon zest, pulsing until smooth.
  3. Season with salt and pepper.
  4. Enjoy!
