Chickpea Fries

I love snack-y meals – big old boards of finger foods to be shared over (multiple) glasses of wine and loved ones. Whether it’s mezze platters, cheese boards, or avo-toast boards. Everything is better when it’s meant to be shared. These Chickpea Fries are perfect for sharing. Dip them in marinara sauce, smoky BBQ sauce, or spiced yogurt for a sharing snack that is as delicious as it is nourishing.

Crispy Chickpea Fries

 

Chickpea flour (also known as gram, or besan flour) is a staple in Indian cuisine… and in my kitchen. It can be found in your “international” sections of your grocery store, or in Indian grocery stores. Chickpea flour is crazy versatile, and is packed with nutty flavour.

Each 1/4 cup (23g) of chickpea flour has:

  • Calories: 90
  • Protein: 5g
  • Fibre: 2.5g
  • Plus many B vitamins (including folate), and iron

In fact, compared to all purpose flour, chickpea flour has ~25% less calories – not to mention protein + fibre, making it a filling option with a low glycemic index!

While I often make crepes or flatbreads with my chickpea flour, you can use it in falafel, to thicken soups, in a pakora batter. I made this super simple “fry” recipe using my air fryer, but you can also bake or shallow fry them if you don’t have an air fryer.

Chickpea Fries

Chill time: 2 hours
Serves: 4

Ingredients

  • 2 cups water or broth (480ml)
  • 1 cup chickpea flour (92g)
  • 2 tbsp nutritional yeast
  • 2 cloves garlic, chopped
  • 1/2 tsp red chilli flakes
  • 1/2 tsp black pepper
  • Pinch sea salt
  • 1-2 tbsp oil, depending on method

 

Instructions

  • Bring water/broth to a boil over medium heat.
  • In a bowl, combine chickpea flour, nutritional yeast, garlic, chilli flakes, pepper, and salt.
  • Add chickpea flour mix to boiling liquid. Stirring until it thickens.
  • Transfer to a greased baking dish, and let sit for 2 hours, or until set.
  • Slice, and toss with oil, and air fry at 200C for 20 minutes, flipping halfway through. Or, shallow fry until golden on each side. Or, bake at 220C/425F for 30-45 minutes.
