Asparagus + Radish Salad

Asparagus is usually a love it or hate it kind of kind. Some people can’t wait for asparagus season, regardless of it it makes their pee smell funky, while others DREAD the smell of it, texture, and taste. Me? I’m in the camp of absolutely loving, could it it every day. Growing up, asparagus season meant one thing: BBQ season. We’d load up the grill with tender asparagus, burgers, and corn, and finish off the meal with a slab of juicy watermelon. To me, asparagus signals the start of summer. While I still love grilled asparagus, I’ve been without a grill for a couple of years, and discovered that raw asparagus was absolutely delicious – so I created this asparagus + radish salad recipe!

 

People are often SHOCKED when I suggest eating asparagus raw. For some reason, it’s a new concept to us – myself included! I only discovered how delicious it was a few years ago. I was peckish and out of my usual carrots, cucumber and celery sticks, but needed to use up the last bit of hummus – if you know, you know. I was pleasantly surprised after biting into my tender asparagus stalk to find that it was a little sweet, a little bitter, and full of grassy flavour – YUM!

After that, I started putting raw apasaragus in everything! Asparagus in salad, asparagus on a platter, shaved asparagus, chopped asparagus, whole – I went a little overboard, I must admit.

Try out my raw asparagus and radish salad – I kept it simple, but feel free to add in any herbs you have on hand. From chives, dill, parsley or tarragon, they’d all work!

Asparagus + Radish Salad

Serves: 2-4

Ingredients

  • 1 bunch asparagus cut diagonally
  • 150g radishes quartered
  • 1 handful microgreens
  • 3 tbsp hemp or olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • pinch sea salt

 

Instructions

  1. Combine asparagus, radishes and microgreens in a bowl.
  2. Whisk together oil, vinegar, maple, and sea salt
  3. Toss to combine.
