Almond Cacao Energy Balls

If you don’t have time to make (or even eat) breakfast and you’re starting to get hangry, these almond cacao energy balls are a great thing to have on hand.

 

 

The rumors are true- almond cacao energy balls for breakfast are a winner! Full vouch! These delicious little balls are nothing short of perfect. They are packed with nuts and dried fruit, covered in cacao, and rolled in toasted coconut flakes. Perfect for breakfast, a snack, or an on-the-go treat.

I know that a lot of people like to run on coffee, but if you’re looking for something else to get you through the morning, I’ve got something delicious and healthy right here for you. These energy balls are great especially if you’re working out because it’s got protein, healthy fats and fiber which will keep you full for a long time.

Each batch only takes a few minutes to prep, so it doesn’t take too much time out of your morning routine!

They aren’t just great breakfast munchies, they’d make for good treats for your Tu b’Shevat seder too! Tu bishvat-friendly, they’re filled with a few dried fruits and nuts from the seven species of the land of Israel—

Collectively known as shivat haminim, the Seven Species are sacred fruits and grains grown in the Land of Israel:

  • wheat
  • barley
  • grapes
  • figs
  • pomegranates
  • olives
  • dates

At first these seven species were eaten together as one dish, but later on they became symbolic foods for each day of Tu Bishvat- one for each day of creation.

Today Jews around the world follow this custom but with different menus. Tu bishvat is a time to enjoy fruits and nuts together with your family and many Israelis do so by eating dried fruits, particularly dates. Our family’s one of them! And this recipe is one of the many things we like to munch on during when we celebrate the New Year for Trees.

There’s one thing I can always guarantee: that you’ll be full after eating two or three of these! They’re deliciously crunchy, good for you, & incredibly easy to make. Now get hustling!

 

 


Almond Cacao Energy Balls

Ingredients

  • 1 cup dates, pitted
  • 1 cup walnuts
  • 1 cup almonds
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tsp ginger, ground
  • ¼ tsp sea salt
  • ½ cup cacao nibs
  • 1 tbsp water, as needed

 

Preparation:

  1. Add dates, walnuts, and almonds to a food processor.
  2. Pulse until a dough forms.
  3. Add vanilla, cinnamon, ginger, sea salt, and cacao nibs, pulsing until mixed. Add water, if needed.
  4. Roll into 16 balls.
  5. Enjoy!
