Sweet Potato Wedges + Tahini Kefir Sauce
Tahini is the glue that holds my body together. Seriously. I go through an embarrassing amount of tahini in a given month. If there's ever a time where dinner is BORING (ok, a lot of the time). My answer is usually: tahini sauce, tahini dressing, or tahini on its own. This tahini kefir sauce is a little tangy, a little rich, and a little spicy, making it perfect for drizzling over sweet potato wedges. I also use this as a tasty salad dressing, in wraps, and as a falafel dip. Seriously, this tahini kefir sauce is amazing.

I get a lot of questions about kefir - it basically tastes like a tangy yogurt that is more drinkable than spoonable. Truth be told, kefir is higher in probiotic goodness compared to a traditional yogurt, making it a great way to introduce some gut loving bacteria into your diet.
Kefir gives this tahini dressing recipe a bit of lightness without a hit of sour vinegar. It's the perfect way to thin it out, especially if your tahini jar is as empty as mine.

Sweet Potato Wedges with Tahini Kefir Sauce

Serves: 4
Ingredients
Potato Wedges
2 sweet potatoes, cut into 8 wedges each
2 Tbsp olive oil
1/4 tsp paprika
1/4 tsp garlic powder
Salt
Tahini Kefir Sauce
1/2 c. plain kefir
1/4 c. tahini
2 tsp sriracha
1 tsp harissa paste
2 Tbsp lemon juice
1 clove garlic, minced
Garnish
2 Tbsp chopped fresh mint
2 tsp sesame seeds
2 Tbsp chopped pistachios
Preparation
Preheat the oven to 200C (400F), line a baking sheet with parchment paper
Cut each sweet potato in half lengthwise, then quarter each half into 4 wedges
Toss with Olive Oil, Paprika, Garlic Powder, Salt and Pepper
Spread evenly on baking tray
Roast for 25-35 minutes or until soft
Drizzle wedges with dressing, and sprinkle with seeds, pistachios and mint
Make the dressing: whisk all ingredients until combined
